Overnight oats.

I like to know the night before what we’re having for breakfast and its not because I like to be organised but because little Bee wakes up ravenous in the morning.

The first thing he does when we get downstairs is run to his high chair and shout at the top of his lungs. I’m pretty sure he just shouts ‘BREAKFAST!’. The boy loves food and it’s certainly the first thing on his mind when he wakes up.

Therefore I try to have something already prepared to grab quickly in the morning. Overnight oats are the perfect breakfast to throw together the night before and put in the fridge while we sleep.

Any fruits, nuts or seeds can be used for overnight oats. I tend to use what we have in the cupboards and fridge/freezer.  All you need are the basic ingredients and you can change it up as you like.

Basic ingredients:

  • Oats
  • Flax seeds
  • Milk

Mango overnight oats

  • 4 tbs Oats
  • 1 tbs Flax seeds (ground)
  • 1 tbs Mixed dried fruit
  • 1 tbs Mixed seeds
  • Milk (we used soy)
  • 1 tbs Grated carrot
  • handful Frozen mango
  • Yoghurt (optional)

layer all dry ingredients in a jar or tub (we use glass jars) and then add milk until all ingredients are covered. Add grated carrot and frozen mango, then pop in the fridge to enjoy in the morning. We sometimes add some yoghurt on top too and this makes is extra creamy and delicious.
